Pour the lime juice over the fish, using enough juice to cover the fish, and marinate at least 4 hours or overnight. Stir occasionally to be sure all surfaces of the fish take in the juice.
Add the onion, tomato, chiles, oil, vinegar and cilantro and mix gently. Refrigerate another 2 hours.
