| 160 g castor sugar | |
| 55 g flour | |
| 4 tsp cocoa | |
| 450 g cooking apples | |
| Few cherries | |
| Few pieces angelica |
| Whisk 2 eggs and 55g. castor sugar together until thick enough to leave an impression of the whisk for a few seconds. Fold in the sifted flour and cocoa powder. Turn into a greased and floured 6-inch flan tin. Bake in centre of oven for 10-12 minutes at 200 C. Turn on to a wire rack and cool. Increase oven heat to 220 C. Peel and core apples. Stew in a very little water until pulpy. Sweeten to taste. Separate remaining eggs. Beat yolks into the cooled apple mixture. Pour into the flan case and place on a fireproof plate. Whisk egg whites until stiff and fold in remaining sugar. Pile on top of the apples and return to the oven for 3 to 4 minutes. Decorate with cherries and angelica. | |
