225 g leeks | |
55 g grated cheese | |

0.25 l water | |
3 eggs | |

0.25 l milk | |

Sift together 135g. flour and salt. Bring water and butter to the boil, add flour and beat well until smooth and mixture forms a ball. Add eggs one at a time, beating until smooth after each addition. Spread a little of the mixture in an ovenproof dish. Pipe the rest around the edge. Wash and slice leeks. Fry for 5 minutes in butter. Add remaining flour, mix well and cook for 2-3 minutes. Remove from the heat and gradually add milk. Return to heat and bring to the boil, stirring all the time until slightly thickened. Add mustard and cheese. Pour mixture into centre of the flan and bake for 40 minutes. | |
