• One chicken, cut into serving pieces; 3 tablespoons soy sauce; juice of 1 lemon; freshly ground black pepper to taste; 3 cloves garlic, crushed; 3 tablespoons salad oil or melted butter. Serves 4. • Mix together soy sauce, lemon Juice, black pepper, garlic and oil. Brush chicken with this mixture then place under a preheated grill until chicken is tender Baste and turn chicken frequently. QUICK CHANGE: Bralsed chicken--Brown chickens in a saucepan. Add marinade: 1/2 teaspoon turmeric; 4 tomatoes, skinned and chopped; 2 onions. thinly sliced; 1 tablespoon ground chili; 1 tablespoon coriander (optional) and 250 ml chicken stock or coconut milk. Simmer gently until tender. | |
