250 g Dessicated coconut |
250 g desiccated coconut in 625 ml boiling water until cool enough to touch. Squeeze together thoroughly then strain through a fine sieve or muslin. Soak the same coconut again in 750 ml boiling water and strain. Combine the two for a medium thick coconut milk. Alternatively, blend coconut and 1 litre hot water in a food processor or blender for 30 seconds and strain. | |
