Indonesian bread pudding

Serves 8

Ingredients

500 g Stale white breadCrusts removed
4 Eggs
6 tbsp Sugar
500 ml Milk
1 tsp Vanilla essence
0.50 tsp each Nutmeg and Cinnamon
150 g Currants or Raisins
Pinch of salt
100 g Butter

Method

Soak the bread in water until soft. Beat together eggs. sugar, milk, vanilla and spices. Squeeze bread well then stir into egg mixture with currants and salt. Grease an ovenproof baking dish or tin with some of the butter. Pour in bread mixture, dot with remaining butter and bake at 180 deg C for 30 minutes. Cut into squares and serve sprinkled with sugar.
