Cheese Gnocchi

Serves 4

Ingredients

500 ml Milk

Method

500 ml milk; 125 g semolina; 50g butter preferably unsalted; salt and freshly ground black pepper; a little grated nutmeg; 2 eggs, beaten; 100 g cheese, thinly sliced. Serves 4.
Bring milk to the boil then add semolina, butter, seasoning and nutmeg. Cook gently for 5 minutes, stirring constantly. Remove from heat and add eggs. Pour mixture into a well greased Swiss roll tin and smooth it out to about 15 mm thick. Leave until cold. Lay cheese slices on top and brown in a hot oven. Cut into 5 cm squares and serve with green salad and your favourite hot tomato sauce.
