French onion soup

3 Large onions

Method

• 3 large onions, sliced; 2 tablespoons oil; 1 table­spoon butter; 1 tablespoon flour; 2 teaspoons mixed herbs; freshly ground black pepper to taste; 1 litre onion stock; 8 slices of French bread spread with butter; 50 g strong cheese, grated. Serves 4.

Heat oil and butter in a flameproof casserole. Add onions. cook until translucent. Sprinkle with flour, herbs and block pepper. Add onion stock. Cook for about 10 minutes. Remove. Cover with overlap­ping slices of French bread. sprinkle with cheese. Place under grill until bread and cheese are crusty. Serve immediately.
