300 g Self-raising flour | |
3 tbsp Coarse cut marmalade | |
60 g Chopped mixed peel | |
Grated rind of 1 orange | |
5 tbsp Water | |
125 g Icing sugar | Icing |
Juice of 1 orange |
Grease and line an 18cm cake tin. Beat butter and sugar until light and creamy. Beat in egg yolks one at a tim with 1 tbsp flour. Stir in marmalade, peel, orange rind and water. Fold in remaining flour. Whisk egg whites until stiff and fold into cake mixture. Turn into prepared tin and bake at 180 degC for 1.25 hours until risen and firm. Cool. ICING: Blend icing sugar with orange juice and pour over cake, letting it trickle down the sides. | |
