No bought pasta can match the quality of homemade. • 250 g plain flour; 3/4 teaspoon salt; 2 - 3 large eggs; 45 g butter, melted. Makes 250 g. • Sift flour and salt on to a pastry board or clean work surface and make a well in the centre. Lightly beat eggs and pour into well with melted butter. Gradually fold flour into egg and butter mixture adding enough water to form a stiff paste. Knead until smooth and manageable, about 5 minutes. Rest pasta for about 1 hour before using. | |
